Whipped Ricotta + Grilled Bread, Herbs, & Olive Oil

Makes 4 servings.

  • 12 oz. whole-milk ricotta cheese

  • 2 tablespoons olive oil + more for bread

  • 1 tablespoon each finely chopped thyme, parsley, and chives (or any ole herb of your liking)

  • 2 large pinches of flakey sea salt, divided

  • 1 pinch freshly ground black pepper

  • 1 loaf crusty bread (i.e. ciabatta)

  1. Preheat grill to medium heat.

  2. In a mixing bowl, whisk ricotta cheese + one large pinch of sea salt until smooth and creamy. Transfer to a serving bowl and top with olive oil, additional sea salt, peppers, and herbs.

  3. Slice bread into 1/2 inch pieces and. Drizzle with olive oil + salt and pepper. Grill bread until toasted on both sides (1-2 minutes per side). If you don’t have a grill, feel free to broil.

  4. Serve bread with ricotta spread!
