North Carolina (Eastern version)
use on the “whole hog”
1/2 cup white vinegar
1/2 cup cider vinegar
2 teaspoons dark brown sugar
2 teaspoons cayenne pepper
2 Tablespoons hot pepper sauce (Tabasco, Crystal, etc.)
1 teaspoon salt
1 teaspoon pepper
**optional 2 Tablespoons ketchup (Piedmont version of NC sauce)
With a whisk, combine vinegar, sugar, cayenne pepper, hot sauce, salt, and pepper (ketchup if desired) in a bowl.
Place mixture in a bottle or jar and let flavors blend over night before using.
