North Carolina (Eastern version)

use on the “whole hog”


  • 1/2 cup white vinegar

  • 1/2 cup cider vinegar

  • 2 teaspoons dark brown sugar

  • 2 teaspoons cayenne pepper

  • 2 Tablespoons hot pepper sauce (Tabasco, Crystal, etc.)

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • **optional 2 Tablespoons ketchup (Piedmont version of NC sauce)

  1. With a whisk, combine vinegar, sugar, cayenne pepper, hot sauce, salt, and pepper (ketchup if desired) in a bowl.

  2. Place mixture in a bottle or jar and let flavors blend over night before using.
