Caprese Salad + Arugula
Salad:
4 small(ish) vine-ripened tomatoes, quartered
1 pound fresh mozzarella cheese, 1-inch diced
20 fresh basil leaves
2 cups arugula salad
Coarse salt + fresh cracked pepper
Vinaigrette:
3 Tablespoons balsamic vinegar
1 Tablespoon dijon mustard
3 Tablespoons extra virgin olive oil
Whisk together balsamic vinegar, mustard, and oil. Lightly toss quartered tomatoes in vinaigrette.
In a separate mixing bowl, toss together mozzarella, basil, and arugula. Arrange on plates. Place 4 dressed pieces of tomato on each plate. Drizzle extra dressing over top of each salad.
Finish with coarse salt + cracked pepper.
