Caprese Salad + Arugula


Salad:

  • 4 small(ish) vine-ripened tomatoes, quartered

  • 1 pound fresh mozzarella cheese, 1-inch diced

  • 20 fresh basil leaves

  • 2 cups arugula salad

  • Coarse salt + fresh cracked pepper

Vinaigrette:

  • 3 Tablespoons balsamic vinegar

  • 1 Tablespoon dijon mustard

  • 3 Tablespoons extra virgin olive oil

  1. Whisk together balsamic vinegar, mustard, and oil. Lightly toss quartered tomatoes in vinaigrette.

  2. In a separate mixing bowl, toss together mozzarella, basil, and arugula. Arrange on plates. Place 4 dressed pieces of tomato on each plate.  Drizzle extra dressing over top of each salad.

  3. Finish with coarse salt + cracked pepper.
