Sauce Tomate


  • 1 Tablespoon butter

  • 2 oz bacon (2 slices), rough chopped 

  • 1 small carrot, peeled + medium dice

  • 1 small onion, peeled + medium dice

  • 2 cloves garlic, crushed

  • 2 Tablespoons tomato paste

  • 1 Tablespoon all-purpose flour

  • 8 oz canned /fresh tomato, diced

  • 2 cups chicken stock

  • 5 springs thyme sprigs

  • 1 bay leaf

  • Salt and pepper to taste

  1. Melt butter in a saucepot and cook bacon over low heat until fat is rendered. Add carrots, onion, garlic, and cook until browned.

  2. Stir in tomato paste and flour and cook for 2 minutes.  Add tomatoes and continue to cook for 5 minutes. 

  3. Add stock and bring sauce to a simmer, continuously stirring. 

  4. Turn temperature to low and add herbs, salt, and pepper. Continue to cook for 45 minutes.

  5. Remove herbs and pass through a food mill or blend with a blender until smooth.
