Sauce Tomate
1 Tablespoon butter
2 oz bacon (2 slices), rough chopped
1 small carrot, peeled + medium dice
1 small onion, peeled + medium dice
2 cloves garlic, crushed
2 Tablespoons tomato paste
1 Tablespoon all-purpose flour
8 oz canned /fresh tomato, diced
2 cups chicken stock
5 springs thyme sprigs
1 bay leaf
Salt and pepper to taste
Melt butter in a saucepot and cook bacon over low heat until fat is rendered. Add carrots, onion, garlic, and cook until browned.
Stir in tomato paste and flour and cook for 2 minutes. Add tomatoes and continue to cook for 5 minutes.
Add stock and bring sauce to a simmer, continuously stirring.
Turn temperature to low and add herbs, salt, and pepper. Continue to cook for 45 minutes.
Remove herbs and pass through a food mill or blend with a blender until smooth.
